Hi everyone!
Welcome to another Tasty Tuesday post! This is one of my favourite childhood treats. My mom would make it at very special occasions and she made it this past weekend at my Gran’s 84th birthday party. I am so excited to share one of my favourite desserts with you.
This is my mom’s recipe for Mini Pineapple Upside Down cakes (thanks Mom):
Ingredients:
For the sauce:
¾ Cup brown sugar
2 Tablespoons margarine
1 Can pineapple rings
Maraschino Cherries
For the cake:
125 g Margarine
¾ Cup White Sugar
2 Large eggs
2 Cups flour
10 ml Baking powder
Pinch of salt
½ Cup milk or pineapple juice
Instructions:
Preheat oven to 180⁰C/ 356⁰F
Beat the brown sugar and margarine and pour into the bottom of the pan.
Place the pineapple ring on top of the sugar mixture and put a cherry in the middle of the ring.
Beat the margarine and sugar until creamy and add eggs one by one.
Sift the dry ingredients and fold into the butter mixture.
Add the milk or pineapple juice.
Pour the batter over the fruit.
Bake for 30 minutes and turn out immediately.
Enjoy with custard or ice cream.

I am so glad you like it. My Mom makes it all in one pan, but I prefer the individual servings. 🙂
