Winter is here and so are the hearty meals and treats that make the long cold nights a bit easier to bear.
Here’s a recipe I came up with last Monday when I had 3 ingredients that I had in abundance in my kitchen.
I also used my handy cupcake maker that I bought at Clicks a few years ago.
It makes 8 cupcakes in about 8 minutes, which makes it a great time saver. I’ve baked at least 1000 cupcakes/muffins with it so far and it has never let me down.
It looks very similar to this Babycakes maker.
So on to the recipe:
Pumpkin, Orange and Oats Muffins.
2 Cups Flour
½ teaspoon cinnamon
½ teaspoon nutmeg
½ teaspoon cloves
1 teaspoon bicarbonate of soda
2 teaspoons baking powder
½ teaspoon salt
1 cup sugar
1/3 cup vegetable oil
1 cup cooked and drained pumpkin
1 cup raw oats
1/3 cup orange juice
1 teaspoon grated orange zest
Mix the dry ingredients (including the oats) in a bowl.
Whisk sugar, eggs and oil in a separate bowl.
Add the pumpkin, orange juice and zest to the wet mixture.
Combine the wet and dry mixture and beat till combined.
Bake at 180 ͦC for 20 minutes.
