Tasty Tuesday: Mini Pineapple Upside Down Cakes

This Tasty Tuesday is a bit of a throwback post. I was unable to bring you something new this week, because we are repainting our home and everything is upside down at the moment. I hope I can find my bearings soon. Have a terrific day 🙂

Hi everyone!

Welcome to another Tasty Tuesday post! This is one of my favourite childhood treats. My mom would make it at very special occasions and she made it this past weekend at my Gran’s 84th birthday party. I am so excited to share one of my favourite desserts with you.

This is my mom’s recipe for Mini Pineapple Upside Down cakes (thanks Mom):

Ingredients:

For the sauce:

¾ Cup brown sugar

2 Tablespoons margarine

1 Can pineapple rings

Maraschino Cherries

For the cake:

125 g Margarine

¾ Cup White Sugar

2 Large eggs

2 Cups flour

10 ml Baking powder

Pinch of salt

½ Cup milk or pineapple juice

Instructions:

Preheat oven to 180⁰C/ 356⁰F

Beat the brown sugar and margarine and pour into the bottom of the pan.
